Chicken & The Game of Life

This game. Remember it? 
I found it in our closet last night and decided "Hey, this looks like fun!" So I pulled it out and we made it a date, complete with home made dinner. 
Dinner was amazing! We had a few pieces of chicken left in the fridge just begging to be cooked, so I found a random recipe online, tweaked it, and we gave it a shot. It turned out amazing! (Best part is, you should have most of the ingredients around already.)
What you need:
  • 2 Tbs Olive Oil
  • 1 Onion, chopped
  • 4 skinless, boneless chicken breast halves
  • 9 Tbs Ketchup
  • 6 Tbs Soy Sauce
  • 9 Tbs White Sugar
  • 6 Tbs Lemon Juice
  • 3 tsp Ground Black Pepper
  • Rice (as much as you'd like to serve with the chicken)
First, you saute the onion in the olive oil. Then you add the chicken and brown it slightly. Mix the ketchup, soy sauce, sugar, lemon juice, and pepper together in a separate dish, then add it to the chicken and bring it to a boil. Cover it, reduce the heat, and simmer for 25 to 30 minutes. Serve over rice.

*It's a little spicy, but it's yummy! I think the only change we'll make next time is to use just a little bit less pepper and MAYBE a little more ketchup. But seriously, it was good enough it's not worth messing with.



As for the game? I've learned one thing. It's impossible to win that game when your husband gets the "Doctor" career every.single.time. Talk about luck!
