Sweet Potato Soup

I've said it before, and I'll say it again. My pictures never do food justice. 
But I'll show you what I made anyway.


Apparently, soup isn't very photogenic. At least not if all you have is a phone to take pictures.


This isn't exactly a pinterest experiment. I found it on instagram. But I'm hoping you'll forgive me and try this anyway. If I had this soup twice a month, I wouldn't cry about it. Unless they were tears of joy... in which case, I might. 


Reasons I love this soup: 
1. It's delicious.
2. You can add cheese AND bacon. And that makes it even better.
3. It's really easy to make.
4. Did I mention it's delicious?


What You Need

Sweet Potatoes (about 1 per person you want to serve)
Chicken or Vegetable Broth (1 for every sweet potato)
Cajun Seasoning

Sour Cream or Plain Greek Yogurt
Shredded Cheddar Cheese
Bacon Bits

What You Do

Peel and cube the sweet potatoes. Toss the sweet potato cubes and broth in a crockpot. After a few hours, blend it with an immersion blender (or, you could do what I did and pour it in a real blender because you don't have an immersion blender). Add in some cajun seasoning, to taste.

Serve with bacon, cheese, and either plain greek yogurt or sour cream.


This is my new comfort food. And it's delicious. It's the perfect combination of sweet and spice and creamy and cheese and bacon and yum.
