Mini Key Lime Pies

Okay, this time this really IS a pinterest review.

A couple days ago, I was desperately looking for a "green dessert" to bring to FHE as instructed; and, the more I looked, the more I realized unless I wanted to douse some cookie dough in green food coloring, I needed to change direction.

I finally came across this link. and those mini key lime pies looked SUPERB. Her pictures are AH-MAZING, but she mentioned she'd had trouble with the recipe, so I followed her link to the original recipe and decided to give that one a shot.
EDIT: The first website has since updated her blog and now her recipe matches the original.

So I decided to make these... and just count the lime garnish as the "green" part of the dessert.

AND. Let me tell you. EVERYONE there asked for seconds. It was great.

But not as great as the fact that I had leftovers in my fridge when I got home.

What You Need

Crust
1 1/2 C graham cracker crumbs, crushed (if you crush by hand, it's about 1 package)
3 Tbs sugar
3/4 stick butter (6 Tbs), melted

Lime Filling
3 egg yolks, beaten
2 (14 oz) cans sweetened condensed milk
3/4 C key lime juice
1 Tbs key lime zest
1/3 C nonfat greek yogurt

Optional
Whip cream
Lime slices

What You Do

Preheat oven to 350 degrees. Line a cupcake tin with cupcake liners.

Combine graham cracker crumbs, sugar, and butter. Press the mixture down into the bottom of the cupcake liners. Make sure it's packed down well. Bake for 8 minutes, then allow to cool before you add the lime filling. (Leave the oven on for a later step)

In a separate bowl, combine the egg yolks, sweetened condensed milk, lime juice, lime zest, and greek yogurt. Mix well.

Pour filling into the cupcake liners, filling them up about 3/4 of the way. Bake for about 15 minutes. Allow to cool and decorate if you so wish.

My Experience

This is probably a newbie thing... but don't use paper liners like I did. They just soak up the butter in the crust and the juice in the filling. No bueno. Newbie mistake. Don't do it. Get the foil liners. Just do it.

I didn't have key limes, so I used regular limes. It didn't ruin it.
(FYI It takes 6-7 limes to make 3/4 cup juice.)

I forgot to put "nonfat" on the shopping list. Regular greek yogurt didn't ruin it either.

Hand crushing graham crackers takes a lot longer than I thought it would. I really need a food processor. Although, taking a wooden spoon to a baggie filled with graham crackers IS a pretty good way to take out any stress or anger you may have in your life.
EDIT: Apparently I DO have a food processor. It was one of those wedding gifts I forgot I had, then discovered after we moved. Yay for finding things you didn't know you had!
