Another pinterest review, brought to you by... me. wahoo!
Through a friend of a friend, I ran across this GLORIOUS page filled with delicious-looking cupcakes, complete with recipes for each and every one of the THIRTY-THREE cupcakes.
Because I was making cupcakes for a birthday party for a lemon-loving guy, #7 "Lemon Cupcakes with Jam Filling" looked like a winner.

What You Need
2 C cake flour
1 1/2 tsp baking powder
1/2 tsp salt
1 1/2 C sugar
1 stick butter, room temperature
4 eggs
3/4 C buttermilk
1/2 C lemon juice
lemon zest
raspberry jam
whipped cream
berries
What You Do
Mix together the cake flour, baking powder, and salt in a bowl. In a separate large bowl, cream the sugar and butter until it's light and fluffy. Then add in the eggs one at a time. Alternate adding in the buttermilk and the flour mixture. Once fully blended, add in the lemon juice and zest. Bake at 350 for 20 minutes. Yields 18 cupcakes.
Allow to cool. Use a small knife to cut a cone out of the top of the cupcake. Cut the bottom off the segment, fill the hole in the cupcake with jam, and cover it with the remainder. Top with whipped cream and berries.
My Experience
First off, if you have a plunger or something that will eliminate the need to cut the top off each individual cupcake... do it. I bought a 2 dollar frosting kit from Walmart, and we ended up leaving the tip off and using it to put the jam in. Much faster, same result. Totally worth the investment.
I made these cupcakes twice. The first time I didn't have zest or raspberry jam.
Instead, I used 2 1/2 extra tablespoons of lemon juice and my mom's homemade strawberry freezer jam. The second time I made the recipe EXACTLY the way it was written.
Brace yourselves... this is just as surprising for me as it will be for you.
I had several people pull me aside and mention that (even though the second batch was good) they liked the first version better! It made me giggle. And feel slightly guilty because the first batch was a practice round and the second batch was for the party.
But mostly it made me giggle.
At least I know better for next time!
