Yummy Gooeyness (Vanilla Oatmeal No Bake Cookies)


This is yet another Pinterest experiment, and I am proud to say that this one was a total success!

The original post can be found here. And I have to tell ya, I'm in love with this blog. It's called Aunt Peg's Recipe Box, and it has enough delectable-looking desserts to last me a lifetime. 


This time around I tried  Vanilla Oatmeal No Bake Cookies.

Those of you that know me well know that I don't really eat chocolate. This can be a problem when you're a food-loving woman with desserts on the mind. I adore no-bake cookies, but almost every recipe out there has some form of the cocoa bean crack mixed into its scrumptious ooeygooeyness.

So I've searched the interwebs off and on for some form of no-bake gooeyness sans chocolate that I can enjoy, and so far I've found a small handful of options. This is the first one I've tried, and it was a success!

They look yummy on her website. They look yummy on my kitchen counter. And the pictures don't lie.





The recipe is SOOOO simple. There aren't any weird ingredients; and they're no-bake, so there's no slaving over a hot oven every 12-15 minutes. (Not that slaving over the oven is bad if it means you get good food.)

Ingredients: 
3/4 C Butter
2 C Sugar
2/3 C Milk
1 (3.4 oz) Box of Instant Vanilla Pudding Mix
3 1/2 C Quick Oats
1/2 tsp Vanilla Extract

On the stove in a large pan, melt the butter, then add in the milk and sugar. Bring it to a boil, and keep it at a boil for at least 2 minutes (the original recipe called for 2 minutes, I probably would have done it for a bit longer so that my cookies set a little sooner). Remove the pan from heat and stir in the pudding mix, quick oats, and vanilla extract. Let the mixture stand for 5 minutes. Spoon onto wax paper (about Tbs-sized) and let cool (or if you're impatient like me... eat some while they're still gooey, then wait for the rest to cool). If you even have leftovers, you can store them in an airtight container.

We made around 25 cookies with this recipe, but ours were probably bigger than a Tablespoon.


My Experience

Really, these are fantastic. The hubsters gave them a solid 7.5, but admitted it was only because he wished they were chocolate. In my book, they're a 9. The only thing we did a little "different" was that we measured the pudding mix from a cannery can instead of using an individual box. We used a heaping 1/3 C and called it good.

The next time I make them, I'm going to use a little less sugar and/or boil the mixture for another minute or two. I might even add in some butterscotch chips or drizzle the tops with some chocolate syrup (for the hubsters). Because it sounds good. And because I can.

There were lots of busy fingers picking up the "spills" while they were cooling.
Even Momma Dennis approved.


I don't know how or why my phone managed to focus like this... but it looked cool. So I posted it.

We had a little extra left over for the last cookie, so we made a GIANT cookie. The hubsters ate it. (of course)
